• 2 C all-purpose flour

• 1 1/2 tsp baking powder

• 1/2 tsp baking soda

• 1/2 tsp salt

• 1 Tbsp grated orange zest

• 1 1/2 C fresh cranberries

• 1/2 C pecans, chopped

• 1/4 C butter, softened

• 1 C white sugar

• 1 large egg

• 3/4 C orange juice

Preheat oven to 350 degrees F. Grease a 9×5 loaf pan. Whisk flour, baking powder, baking soda, and salt
together in a large bowl. Stir in orange zest, cranberries and pecans. Set aside. In a large bowl, beat butter,
sugar and egg together until smooth. Stir in orange juice. Beat in flour mixture until moistened. Pour into loaf pan. Bake for about one hour.
