• 1 C brown sugar

• 1 C white sugar

• 1 1/2 C shortening or margarine

• 2 eggs

• 1 tsp baking soda dissolved in 2 Tbsp white vinegar

• 4 C flour

• 1/8 tsp salt

• 1 tsp vanilla

• 1 tsp almond extract

• 1/2 C pecans if desired


Cream sugars in shortening, add eggs and mix well. Add vinegar mixture and stir well. Add dry ingredients and mix well. Roll into balls the size of walnuts. Press down and crisscross with a fork dipped in flour. Bake on a greased cookie sheet at 350 degrees for 9 minutes. Remove from oven and let stand for 2 minutes before removing from sheet. Makes 7-8 dozen cookies.
