• 1 unbaked, 9-inch pie crust
• 12 slices bacon, cooked and crumbled (reserve grease)
• 1 C shredded Swiss cheese
• 1/3 C minced onion, sautéed in bacon grease
• 4 eggs, beaten
• 2 C half and half
• 3/4 tsp salt
• 1/4 tsp sugar
Preheat oven to 425 degrees. Sprinkle bacon, cheese and onion into pastry shell. In medium bowl, whisk together eggs, cream, salt, sugar. Pour into pastry shell. Bake 15 minutes. Reduce heat to 300 degrees and bake an additional 17 to 20 minutes, or until knife inserted 1 inch from edge comes out clean. Allow quiche to set 10 minutes before cutting.
