INGREDIENTS:

4 medium green tomatoes

2 Tbsp flour

1/4 tsp black pepper

1 medium egg

1/2 C oil or bacon drippings

1/2 C cornmeal

1 tsp salt

1 tsp sugar

1 Tbsp water

DIRECTIONS:

Stove top: Combine flour, salt, pepper and sugar (the sugar makes them nice and brown). Set aside. Combine egg and water. Beat well, wash and slice the tomatoes into 1/4” slices. Dip the tomato slices into the egg mixture and then into the corn meal mixture. Fry tomato slices in hot oil until browned, turning once. Drain well on paper towels. Serve hot.

Oven: Lightly coat a 15-by-10 pan with cooking spray. Place tomatoes in a single layer in pan and bake at 450 degrees for 30 to 40 minutes or until brown, turn once.
